The charter yacht JAMBALAYA, a 73-foot wooden schooner, wrote to announce that they will begin their 2013-14 charter season in the Grenadines on November 11, 2013. They also sent us a new sample menu.

Every day a different variety (or the same if you wish!) of the following:

Blending the best of traditional wooden boat construction with the latest nautical technology and outfitted to the highest standard, Jambalaya is a perfect combination of tradition and comfort.

Jambalaya's spacious, classic interior features varnished hardwoods, contrasting pleasantly with the traditionally white-painted decor, making every room light and inviting. The master cabin has a king-size bed, 9-foot headroom, ensuite head, and its own personal entrance giving total privacy. The other two guest cabins each have a double bed and share a head between them.

A large covered cockpit is a perfect place for outdoor dining while enjoying the panoramic views. The deck itself is very large and spacious with plenty of room to relax in the shade or sun. Peter & Sylvie are passionate about providing the best service and exquisite food!

Jambalaya is based in the Grenadines and charters in the Windward islands, but inquire for other Caribbean locations... never hurts to ask!

Charter Yacht McGregor Recipe: Grand Marnier French Toast with an Orange Butter Sauce

Thinking about brunch? Here's a tasty idea...

Grand Marnier French Toast with an Orange Butter Sauce

By: Chef Julie Brown, Charter Yacht McGregor II

Serving Size: 6

Ingredients:

FRENCH TOAST

• 12 slices French Bread, cut 1 1/2″ thick
• 6 ounces Cream Cheese
• 6 ounces Orange Marmalade
• 1/4 cup Grand Marnier
• 1 1/2 cups Half and Half
• 1/4 cup Orange Juice
• 8 large Eggs
• 2 teaspoons Nutmeg, freshly ground

ORANGE BUTTER SYRUP

• 1/2 cup Butter
• 1/4 cup Orange Juice
• 1/4 cup Grand Marnier
• 1 cup Powdered Sugar

Method:

Using a sharp bread knife, make a pocket in each slice of bread. Place a small slice of cream cheese inside. Add orange marmalade to the pocket.

Beat together the eggs, cream, Grand Marnier, orange juice and nutmeg.

Pour egg mixture over the bread, and let stand 5 minutes.

Fry each slice in butter until golden brown. Remove to a cookie sheet and place in a warm oven (350 degrees). The toast will puff up and finish cooking through in the oven.

For the orange butter syrup, melt all ingredients together in a small saucepan.

To serve: Spoon syrup on the plates, add 2 slices french toast and sprinkle with powdered sugar. Garnish with fresh oranges or mint.

Goes great with mimosas!

McGregor is a 58-foot Hatteras motor yacht with a owner-operator crew of two, Tim and Julie.

McGregor is air conditioned and can accommodate up to 6 guests in 3 cabins, all each having their own private head/shower. The master cabin, aft, has a Queen bed, desk, TV/DVD. The middle cabin has two single beds that can be converted into a queen, with its bathroom across the hallway. Tim is a diving instructor and 7 dives/week for certified divers are included in his rates, plus two FREE resort/discover scuba course are included for non-certified divers who want to try out scuba. A referral course to complete the dive portion of your PADI Open Water Diver certification is also free.

We received after-charter comments from a honeymoon couple that we recently had aboard Antillean, one of our favorite charter yachts in the Virgin Islands.

• How did you enjoy your charter?

Jason and I had a fantastic honeymoon.  It was everything we had dreamed it would be and more.  What other way can you travel 150 miles through the BVIs and see so many things in one trip?

• How would you describe your crew? Were they courteous, helpful, friendly, attentive, knowledgeable?

Heidi and John were very personable and hospitable.  They were attentive to our every need.  They were extremely knowledgeable about the area.  We visited many private beaches.  We arrived at the popular destinations (i.e. The Baths and Sandy Spit) before the crowds came in.  They knew the great local bars and restaurants.

• Was the yacht comfortable, clean and well maintained?

The yacht was beautiful, comfortable and very clean.

• How would you describe the quality and presentation of the meals served on board?

Heidi is an amazing chef... She catered to my gluten allergy and always had something different planned.  If you like Indian food ask her to make John's favorite dish... We loved it!

• Did the crew pay close attention to your Preference Sheets?

Very close attention

• How did you find the services offered by Paradise Connections?

Very helpful and professional

• Would you be interested in taking another yacht vacation in the future?

Yes

• Did you stay in a hotel before or after your charter?

Yes, on both sides and recommend it

• If so, which one and what are your comments?

Stayed at the Marriott Frenchman's Reef... beautiful hotel, but could be better on the service side.
