Schooner Jambalaya Yacht Charters & New Sample Menu

The charter yacht JAMBALAYA, a 73-foot wooden schooner, wrote to announce that they will begin their 2013-14 charter season in the Grenadines on November 11, 2013. They also sent us a new sample menu.

We are pleased to offer you the following sample menus that you will enjoy onboard Jambalaya, with our French Chef Sylvie :

Welcoming cocktail : Jambalaya Pina Colada…

Breakfast

Every day a different variety (or the same if you wish!) of the following:
Tropical fruit platter
Selection of cereals and yogurts
French Pancakes / French Bread with maple syrup
Fresh bread or toast
Scrambled eggs / poached eggs
Choice of fresh juices, fresh coffee and tea

Starters

Baked goat cheese Salad with Garlic croutons served on a bed of mixed salad with walnut dressing
Foie gras served with figues jam on toasts
Spicy Crab cakes with roasted peppers and roasted garlic salad
Smoked salmon and prawn salad served with ginger and sesame dressing
Smoked Marlin with cream cheese and pinenuts served on a rocket salad with balsamic vinaigrette
Chicken brochettes with tarragon and grapes

Main courses Dinner

Canapés : Selection of “French Verrines”  and canapés with salmon

Grilled Lobster on the BBQ with cognac, butter and garlic sauce
Beef Filet Mignon with prune sauce and creamy Gratin dauphinois potatoes
Honey and mustard coated chicken breasts with mango salsa
Seared Mahi-mahi with lemon and herbes de provence dressing
BBQ Grilled KingFish with Mango Beurre Blanc and sweet potato puree
Chilli infused Shrimp with sweet chilli sauce
BBQ grilled pork tenderloin marinated with grilled red onions & honey BBQ sauce accompanied with garlic sautés potatoes and roasted sherry tomatoes
Timbale of cured tuna and avocado with a tomato and basil dressing

Desserts

Chocolate Mousse infused with chili
Bananas flambées with rum and vanilla ice cream
French pancake with glazed bananas & hot chocolate sauce
Exotic Fruit Cheesecake with a mango coulis
Warm Chocolat Fondant cake
Selection of Cheese & Biscuits with apple and grapes



Blending the best of traditional wooden boat construction with the latest nautical technology and outfitted to the highest standard, Jambalaya is a perfect combination of tradition and comfort.

Jambalaya's spacious, classic interior features varnished hardwoods, contrasting pleasantly with the traditionally white-painted decor, making every room light and inviting. The master cabin has a king-size bed, 9-foot headroom, ensuite head, and its own personal entrance giving total privacy. The other two guest cabins each have a double bed and share a head between them.

A large covered cockpit is a perfect place for outdoor dining while enjoying the panoramic views. The deck itself is very large and spacious with plenty of room to relax in the shade or sun. Peter & Sylvie are passionate about providing the best service and exquisite food!

Jambalaya is based in the Grenadines and charters in the Windward islands, but inquire for other Caribbean locations... never hurts to ask!

Schooner Jambalya: 5th West Indies Regatta St. Barth’s

The charter yacht Jambalaya, a 73-foot schooner built by Alwen Enoe on Carriacou in 2002, is available for fun & frolic at the 5th Anniversary West Indies Regatta in St. Barth’s May 3-5, 2013.


2009 Regatta Highlights - Looks like great fun! 

Celebrate traditional sailing, live music and much more in the party capital of the Caribbean!

Limited to built-on-the-beach sloops and schooners, the regatta promotes the dying art of Caribbean boatbuilding. Festivities include an artisanal market showcasing arts & crafts, organic produce and unique specialty products from all our islands that arrive under sail – just like the old days!

Racing: Saturday 4th May and Sunday 5th May, 2013
  • Day sails: $350pp includes lunch and drinks
  • Stay onboard: $650pp includes breakfast, lunch, drinks. Max 3 couples.

RECIPE: Coq au Vin, from Jambalaya

Sylvie, from the charter yacht Jambalaya, shares a favorite family recipe which is quick and easy for family and friends over the holidays.  Serve with roast potatoes, crusty bread to soak up the delicious juices and more French wine... bien sûr!

COQ au VIN : Serves 4-6 
  • 2 chicken breasts
  • 4 chicken drumsticks
  • 4 chicken thighs
  • 150g diced bacon (4 oz)
  • 10 shallots peeled
  • Thyme and rosemary sprigs
  • 1/2 tsp dried chili flakes
  • 3 tbsp olive oil
  • 250 ml white wine (one 8 oz cup)
  • 2 tsp of brown sugar
  • Small knob of butter 
  • 350g mixed mushrooms, if possible baby bella mushrooms (10 oz)
  • 5 garlic cloves
  • Fresh coriander
  • Sea salt
  • Black pepper
  1. Preheat oven to 200° C (390°F)
  2. Arrange the chicken pieces in a roasting pan and scatter with the bacon, shallots, thyme, rosemary, 2 whole garlic cloves and chilli flakes. Season with sea salt and freshly ground black pepper. Drizzle with olive oil and roast in the oven for 20 minutes.
  3. Add the wine and brown sugar and roast for another 30 minutes. Remove from the
    oven.
  4. Heat the butter in a frying pan then add mushrooms and garlic and brown for 3 to 5 minutes.
  5. Tip into the roasting pan and scatter with coriander!

Welcome Charter Yacht Jambalaya to the Caribbean fleet

The charter yacht Jambalaya is a 73-foot wooden schooner built in 2002 in Carriacou. Peter and Sylvie, owner-operators of Jambalaya, completed a full re-fit in 2010 so all the interior design is new.

One cool feature of a charter aboard Jambalaya is that their "All Inclusive" rate INCLUDES standard ship's bar, which unfortunately is unusual for "down-island" charter yachts. A gold star for Peter & Sylvie!
