Pineapple and Coconut Muffins - makes 6
INGREDIENTS:
- 2 cups of flour, 2 tsp of baking power
- ¾ cup of sugar, a pinch of salt
- ½ tsp of cinnamon
- 1 ¼ cup of baking coconut, 1 ¼ cup melted butter
- ¾ cup of milk
- 2 eggs
- 1 cup roughly diced fresh pineapple
METHOD:
- Sift the flour, baking powder and salt.
- Add the sugar, cinnamon and coconut.
- Make a well in the center and add butter, milk and eggs.
- Mix and then fold in the pineapple.
- Divide the mixture between 6 muffin cups and,
- Bake for 25-30 minutes @ 350°F.
