Charter Yacht HANALEI BAY - Guest Comments / Reviews - Family charter

Guest comments from a  client of ours from Brussels & Scotland for their Family New Year's Charter aboard the 72-foot charter yacht HANALEI BAY.

An extraordinary combination of technical ability, natural good humour and the wonders of the West Indies made our holiday charming and memorable.

Franz is a trained Chef and it shows. Each dish made from fresh ingredients, (even the fettuccine was made from flour water and effort!) beautifully presented on the Hanalei Bay’s amazing range of dishes and napery. Steaks on the barbecue, fresh fish caught in the morning from the boat and cooked forlunch, a truly remarkable success, i.e. of very different and always tasty dishes presented with style.

Diane and Franz offer training in fish-filleting, water sports, sailing and wildlife and Franz is an expert amateur surgeon when sea urchin spines have to be removed.

We were charmed from the moment we arrived on board. We shall return. We warmly recommend a cruise on Hanalei Bay to anyone who thinks they might like a holiday with a difference, who has sailed or might like to sail, who wants to explore inaccessible beaches and tiny islands, and who wishes to be made welcome by congenial hosts who are skilled in making guests feel happy.

We are happy for you to use any of the foregoing remarks to be shared with anyone.

What can I add to the list of compliments already express by the rest of the family!  This has been an extremely entertaining, fun and amusing trip. BVI Spring Regatta and Around Virgin Gorda Race

This information about the 2009 BVI Spring Regatta and Sailing Festival, plus the Around Virgin Gorda Race is from SAIL-WORLD.COM


Although each year, the basic format remains the same, the organizers of BVI Spring Regatta and Sailing Festival work hard to fine tune the event. This year’s edition, March 30 – April 5, is no exception with two innovative additions that will add value for the participants.

First, on the traditional Sailing Festival Layday, at the Bitter End Yacht Club, sailors will have the option to compete in the Around Virgin Gorda Race. Secondly, the BVI Customs Department has granted special dispensation to those yachts participating in the BVI Spring Regatta and Sailing Festival and will not be charging for cruising permits. Additionally, to expedite the clearing in and clearing out process, Masters can file electronically.

About the changes in the Bitter End Layday schedule, John Glynn, V.P. North American Sales, explained, 'Our intention is to now run the much anticipated Around Virgin Gorda Race (the 7th Annual) as part of the BVI Spring Regatta and Sailing Festival, on Wednesday April 1st. There will be special prizes for Swans, and the top Swan will be recognized. Entry in BVI Spring Regatta and Sailing Festival is not required.' He went on to say, 'In an interesting twist, racers in the Around VG Race this year will be given the option of going either way around the island. The current course record is just under three hours, held by the Swan 100S, Virago.'

In addition to BVI Customs and Immigration officials being on site at Nanny Cay from noon – 18.00 on Monday March 30 and Thursday, April 2nd, Customs will be waiving the Cruising Permit fee. The fee is $4 per person, per day, and with boats carrying anywhere between five to twenty crew members, the per day savings for visiting yachts will be anywhere between $20 - $80,

Wade Smith, BVI Customs Comptroller, also requested that visiting yachts entering the BVI, streamline the process for clearing in and out electronically. The Caribbean Pre-Arrival Notification system, eSeaClear, is a service that provides vessel operators the ability to submit electronic notifications of arrival to participating Customs offices in the Caribbean. Registered users can access the system to enter and maintain information about their vessel or vessels, crew and passengers. Prior to arrival at a new country the vessel operator simply ensures the information is accurate for the upcoming voyage and submits a new notification. eSeaClear was developed working closely with Customs to ensure that small vessel operators had a faster and more positive experience when clearing in and out of port.

Charter Yacht THE DOVE - Cheesecake Recipe


Spotlight on Captain Larry Tyler: owner & captain of sailing yacht THE DOVE (54-foot sloop) and also a trained chef, professional photographer & filmmaker who sailed around the globe on a 35' yacht using celestial navigation. Larry here shares with us one of his secrets for happy, repeat charter guests on THE DOVE!

The Dove Ginger Cheesecake
  • 1/2 cup of water
  • 1/2 cup of brown sugar
  • 1/4 cup of fresh ginger
  • Grated zest of one lemon or lime
  • 24 ounces (700gm) cream cheese
  • 2-3 eggs
  • 1/4 cup of heavy cream or yoghurt
  • 1 teaspoon Vanilla extract
  • Handful of white raisons soaked in rum for about an hour (optional)

Base / Crust
  • 1 cup of Hob-Nobs biscuits
  • 1/4 cup of brown sugar
  • 2 tbs. unsalted butter melted, cooled
Preheat oven to 200 c (375 F). Peel ginger and cut into thin slices and then cut again into thin slivers. With a sharp knife peel the lemon and cut the zest into thin matchsticks. Place ginger, lemon zest, water and sugar into a small pan and bring slowly to the boil, then simmer for 2 minutes and leave to cool and then strain syrup through a sieve, reserving the lemon zest and ginger for the crust. In a large bowl whisk the cream cheese with an electric mixer on medium until smooth, add eggs one at a time, cream or yoghurt and vanilla extract and beat until smooth. Fold in the sieved cooled syrup until blended and then rum soaked raisins if desired.

Base: break up the biscuits and crush them in a bowl, add the melted cooled butter and mix well with a wooden spoon. Then put mixture at bottom of round baking tin and press hard with spoon or the bottom of a flat glass or mug. Sprinkle the biscuit mixture with the lemon zest and ginger. Pour the cream cheese mixture on top of biscuit base and place in the oven for approx. 45 minutes or until golden brown on top and the centre is still a little wobbly when you move it. Allow to cool and place in the refrigerator for a few hours or over night, serve well chilled.

Note: Cooking time depends on your preference of how moist you like the finished cheesecake. Inserting a knife does not work on this cake. When the cake comes out of oven it will deflate a little this is normal.

Using an 8" (20cm) to 9"(23cm) x 3"(8cm) round baking tin with detachable base is best.

For the base you may also digestive biscuits or ginger snaps. Raisins can omitted, if desired.

ATTN PARROTHEADS: JIMMY BUFFETT RUMOR

Attention to all Parrotheads and to all that enjoy a good time...

We just heard a rumor on our local St Maarten radio station that Jimmy Buffett will be doing a concert in November 2009 to celebrate the 60th anniversary of Le Select restaurant in St.Barths.

Someone else said that they had talked to someone and:
  • that JB will play sometime over the 3 days, but only a few songs and it will not be a concert! It will only be at Select and not at the dock like before and will NOT be as big of party. He said that the 50th was sooo much work preparing months ahead for it he did not what to go thru all of that again. Things might change with Jimmy, but for right now just a couple of songs at Select on one of the three days.
We really enjoyed the Anguilla concert two years ago and this sounds like a fun time, too.

What would be cooler than to be on your own chartered yacht for this historic event. We hope to be there!
